Chewy, salty pretzel bites from shop-bought dough. The baking soda bath is what makes them taste like a pretzel and not a bread roll.

- 1 kg pizza or bread dough, shop-bought is fine, at room temperature
- 3 l water, for the soda bath
- 6 tbsp bicarbonate of soda, for the soda bath
- 2 egg, beaten, for brushing
- 4 tsp flaky salt
- 60 g butter, melted, to finish
Steps

Roll the dough into ropes and cut into 3 cm / 1¼ in bites. Bring the water and bicarbonate of soda to a boil.

Boil the bites in batches for 30 seconds each, then lift them out onto a rack to drain.

Preheat the air fryer to 180°C / 360°F.

Brush the bites with beaten egg, sprinkle with flaky salt, and arrange them in one layer.

Cook for 3 minutes.

Shake the basket to turn the bites.

Cook for a further 3 minutes until deep brown, then brush with melted butter.
