Log inIngredients
- 4 cod loin fillets, about 180 g / 6 oz each, 2.5 cm / 1 in thick
- 80 g plain flour
- 2 egg, beaten
- 160 g panko breadcrumbs
- 2 tsp fine salt
- 2 tsp lemon zest
- 4 tsp oil, in a pump sprayer
Steps
-
Preheat the air fryer to 190°C / 380°F.
-
Pat the fillets very dry. Set out flour, beaten egg, and panko mixed with salt and lemon zest.
-
Coat each fillet in flour, then egg, then press into the panko. Spray both sides lightly with oil.
-
Cook for 10 minutes, leaving the fish undisturbed — it is too delicate to flip safely.
-
Check the centre reads 63°C / 145°F and the fish flakes with a fork. Serve with chips and tartare sauce.
