Ingredients

  • 4 cod loin fillets, about 180 g / 6 oz each, 2.5 cm / 1 in thick
  • 80 g plain flour
  • 2 egg, beaten
  • 160 g panko breadcrumbs
  • 2 tsp fine salt
  • 2 tsp lemon zest
  • 4 tsp oil, in a pump sprayer

Steps

  1. Preheat the air fryer to 190°C / 380°F.

  2. Pat the fillets very dry. Set out flour, beaten egg, and panko mixed with salt and lemon zest.

  3. Coat each fillet in flour, then egg, then press into the panko. Spray both sides lightly with oil.

  4. Cook for 10 minutes, leaving the fish undisturbed — it is too delicate to flip safely.

  5. Check the centre reads 63°C / 145°F and the fish flakes with a fork. Serve with chips and tartare sauce.
