Ingredients

  • 375 g beef mince, or half beef, half pork
  • 38 g breadcrumbs
  • 1 egg, beaten
  • 23 g Parmesan, finely grated
  • 2 cloves garlic, crushed
  • 1½ tbsp flat-leaf parsley, chopped
  • ¾ tsp fine salt
  • ½ tsp black pepper

Steps

  1. Preheat the air fryer to 185°C / 370°F.

  2. Mix everything together with your hands until just combined — overworking makes the meatballs tight.

  3. Roll into 20 even balls, about 40 g / 1½ oz each, and space them out in the basket.

  4. Cook for 6 minutes.

  5. Shake the basket to roll the meatballs over.

  6. Cook for a further 6 minutes until browned all over.

  7. Check one from the middle reads 71°C / 160°F, then serve or simmer in sauce.
